Creamy Mushroom Pasta Recipe

Serves/Makes: 4
Ingredients:
3 cups uncooked bow tie pasta
1 tablespoon olive oil
1 package (8 oz size) baby bella mushrooms, sliced
salt and pepper, to taste
1/2 cup vegetable broth
1/2 teaspoon thyme
1/2 cup light sour cream
1/2 teaspoon garlic powder
shredded Parmesan cheese, optional
Directions:
Prepare bow tie pasta according to package directions.
Meanwhile, heat olive oil in large skillet over medium-high heat. Add mushrooms and saute until lightly browned. Season with salt and pepper. Stir in broth, garlic powder and thyme; simmer for 1 minute.
Turn off the heat and stir in sour cream. Add cooked bow tie pasta to the pan and toss to combine. Season with additional salt and pepper. Serve with shredded Parmesan cheese, if desired.
