Slow Cooker Black Bean, Cabbage, And Potato Soup

ingredients
8 slices bacon
1 large onion, chopped
6 small red potatoes, diced
4 cups cabbage, shredded
3 cups beef broth
1 cup red wine
1 can (15 ounce size) black beans, rinsed & drained
1 tablespoon minced garlic
2 tablespoons rice vinegar
1 tablespoon brown sugar
salt and pepper
directions
Heat a skillet over medium heat. Add the bacon and cook until crisp. Remove the bacon from the pan and place on paper toweling to drain. Drain off all but a small amount of the bacon grease from the pan. Add the chopped onion to the pan and cook over medium heat until soft.
Add the cooked onion to the crock pot along with the potatoes, cabbage, garlic, and beans. Crumble the bacon and add to the crock pot.
Sprinkle the mixture with the brown sugar. Pour the beef broth, wine, and rice vinegar over the ingredients and stir gently to combine.
Cover the crock pot and cook on low heat for 6-8 hours or until the vegetables are soft. Season to taste with salt and pepper as needed.
