Beef & Mushroom Gravy Over Potatoes

2 pounds eye of round, cut into 1/2" pieces, all fat removed
1 cup fat free, onion flavored beef broth
1 envelope (1 ounce size) dry onion soup mix
1 can (10.75 ounce size) 98% fat free cream of mushroom soup
1 package (8 ounce size) sliced mushrooms, rinsed
7 medium potatoes, washed
Spray crock pot with nonstick cooking spray.
In cooker stir together the eye of round, beef broth, onion soup mix, mushroom soup, and mushrooms until well mixed. Put potatoes on top.
Cover and cook on high for 5 hours.
To serve, cut the potatoes in half lengthwise. Spoon 1 c. beef and mushroom gravy over the potatoes.
