Grilled Rib Steak With Red Wine-Onion Marmalade Recipe

Serves/Makes: 4
Ingredients:
1 tablespoon margarine or butter
1 tablespoon sugar
2 large red onions, thinly sliced
1 teaspoon vegetable oil
2 bone-in beef rib steaks (1 lb size), 3/4" thick
1/2 teaspoon ground black pepper
3/4 teaspoon salt
1/4 cup dry red wine
2 tablespoons balsamic vinegar
Directions:
In nonstick 12-inch skillet, melt margarine over medium heat. Add sugar and onions and cook, covered, 10 minutes. Uncover and cook 5 minutes longer or until onions are very soft and lightly browned, stirring occasionally.
Meanwhile, brush 10-inch grill pan or cast-iron skillet with oil; heat over medium-high heat until very hot but not smoking.
Sprinkle steaks with pepper and 1/2 tsp. salt; place in grill pan. Cook steaks 8-10 minutes for medium-rare or until desired doneness, turning over once. Transfer steaks to cutting board; keep warm.
Add wine, vinegar, and remaining 1/4 teaspoon salt to onions in skillet; cook 2 minutes or until most of liquid evaporates. Makes about 1-3/4 cups.
Thinly slice steaks and serve with warm onion marmalade.
