A simple recipe for pan-searing steaks with light Cajun seasoning.

1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2 teaspoons Cajun seasoning
4 top sirloin steaks (5 ounce size)
1 1/2 tablespoon olive oil
Combine the salt, pepper, and Cajun seasoning. Sprinkle the steaks on both sides with the seasoning mixture.
Evenly drizzle olive oil over the steaks.
Heat a large skillet over medium-high heat. Add the steaks and sear for 30 seconds then reduce the heat to medium. Cook until browned, about 5 minutes.
Turn the steaks over and cook for 3-4 minutes longer or until desired doneness.

You really don't need a recipe for how simple this is, but it's an easy guide to pan-searing steaks. They turned out perfect. For 5 ounce size steaks (which are quite small), the cooking time will leave them about medium. You can use whatever size steaks you like, just adjust the time for your desired doneness.
