Untraditional Clam Chowder

4 pounds chopped clams
2 sticks butter
3 medium onions, chopped
1 pound smoked sausage, diced
1 fresh thyme sprig
4 large potatoes, diced
1 can (16 ounce size) cream corn
1 can (16 ounce size) cut green beans, do not drain
1 quart whole milk
1 pint heavy cream
Boil potatoes in a separate pan with just enough COLD water to cover.
Melt butter and saute onions and sausage until onions are sweated through (look clear but not browned). Add fresh thyme to taste.
Drain. Add potatoes to onions and sausage and continue to cook for another 15 minutes.
Add corn and green beans and when mixture reaches a boil, stir in chopped clams and cook for only 2 minutes. Clams get tough if you overcook so no more than 2 minutes. Remove from heat and cover.
In a separate pan, heat milk and cream until very hot. Add to pot, stir well and bring to simmer and serve. Do not let it boil.
