Ingredients:
12 ounces ziti
2 teaspoons olive oil
1 large onion, minced
3 cloves of garlic. minced
2 carrots, minced
1 rib of celery,minced
6 ounces extra-lean ground beef
4 ounces lean ground pork
1/2 dry white wine
2 tablespoons flour
1/2 cup milk
24 ounces tomato sauce
3/4 teaspoon dried oregano
1/2 teaspoon dried rosemary
Salt to taste
pepper to taste
4 ounces shredded mozzarella
1/4 cup grated parmesan cheese

Directions:

Cook ziti and drain well. Transfer to a large bowl. Meanwhile, in a large nonstick skillet,, heat the oil until hot but not smoking over medium heat. Add garlic and onion and cook, stirring frequently until the onion has softened, about 7 minutes. Add the carrots, celery and cook until they have softened, about 5 minutes longer.

Preheat oven to 400 degrees. Spray a shallow 3-quart baking dish with nonstick spray. Stir the beef, pork into vegetable mixture and cook, stirring frequently until no longer pink, about 4 mins. Add the wine and cook until the liquid has almost evaporated. Stir in the flour until well combined. Gradually stir in milk and cook until the mixture is slightly thickened, about 4 mins. Stir in the tomato sauce, herbs, salt and peppere until blended - about 4 mins longer. Add the meat mixture to the ziti and toss well to combine.

Spoon ziti mixture into the prepared baking dish and bake for 10 minutes. Springle the mozzarella and parmesan on top and bake 5 mins loner until cheese has melted and pasta is hot.
