It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

Mint, tomatoes, and parsley elevate some bulgur wheat dressed with lemon juice and oil in this copycat tabbouleh salad

1 cup cracked bulgur wheat
2 1/2 cups chopped parsley
2 cups chopped tomatoes
1 tablespoon chopped fresh mint
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup lemon juice (or to taste)
3/4 cup salad oil
Rinse and drain wheat. Add remaining ingredients and mix well.
Let sit 4 hours before serving.
This salad keeps refrigerated for several days.
