ingredients
1 pouch (7 ounce size) albacore tuna
OR
2 cans (6 ounce size) albacore tuna (if using cans, drained and chunked)
1/2 cup onion, chopped
3 tablespoons soy sauce
1 tablespoon lemon juice
3 tablespoons vegetable oil
1 bag (16 ounce size) frozen Asian vegetables
OR
4 cups thinly sliced assorted vegetables (carrots, peapods, broccoli, bell pepper, mushrooms, celery)
1 teaspoon sugar
2 cups rice, cooked, hot
directions
Heat oil in a large skillet or wok and stir-fry onion, garlic, and vegetables until tender-crisp, about 4 minutes.
Add Albacore, soy sauce, sugar, lemon juice, and 1 Tbsp. Water. Stir-fry for 1 minute. Serve over hot rice.
