Albacore Stir Fry Recipe

Ingredients:
1 pouch (7-oz. size) Albacore tuna
OR
2 cans (6-oz. size) Albacore tuna (if using cans, drained and chunked)
1/2 cup Onion, chopped
3 tablespoons Soy sauce
1 tablespoon Lemon juice
3 tablespoons Vegetable oil
1 bag (16-oz. size) Frozen Oriental vegetables
OR
4 cups Thinly sliced assorted vegetables (carrots, peapods, broccoli, bell pepper, mushrooms, celery)
1 teaspoon Sugar
2 cups Rice, cooked, hot
Directions:
Heat oil in a large skillet or wok and stir-fry onion, garlic, and vegetables until tender-crisp, about 4 minutes.
Add Albacore, soy sauce, sugar, lemon juice, and 1 Tbsp. Water. Stir-fry for 1 minute. Serve over hot rice.
