Baked Salmon With Peppercorn Crust Recipe

Serves/Makes: 4
Ingredients:
4 (6-8 oz size) salmon steaks
1/2 cup whole-wheat bread crumbs
1/4 cup grated peppercorn Jack cheddar cheese
2 teaspoons firmly packed brown sugar
1 teaspoon lemon-pepper seasoning
2 teaspoons chopped fresh dill
Directions:
Heat oven to 400F. Coat baking sheet with nonstick olive oil spray.
Place salmon on baking sheet and coat lightly with spray.
In small bowl, mix remaining ingredients. Spoon mixture over top of salmon, dividing evenly. Coat lightly with spray.
Bake 20 minutes, or until breadcrumbs are lightly browned and fish is just opaque in center with tested with tip of knife. Serve hot or at room temperature.
