Ingredients:
3/4 cup lentils, preferably French Le Puy lentils
3 cups vegetable stock or mushroom broth
1 ounce dried wild mushrooms such as porcini or shiitake, broken into small pieces
2 tablespoons mirin (Japanese seasoning wine), sherry or Marsala
1/4 teaspoon sea salt
Freshly ground black pepper
1 small onion, chopped
4 salmon fillets (4 ounces each)
1/2 lemon

Directions:

Pick over lentils to remove any small stones or broken lentils. In a large saucepan, combine lentils, broth, dried mushrooms, mirin (or sherry or Marsala), salt and a grinding of pepper. Bring the liquid to a boil, cover and cook until the lentils are tender, about 25 minutes.

While the lentils are cooking, preheat the broiler. Spray the broiler pan with cooking spray. Season salmon with salt and pepper. Place on prepared broiler pan. Broil fish for 8 to 10 minutes, until cooked through.

Spoon lentils onto dinner plates. Set the salmon on top and sprinkle with lemon juice.
