ingredients

2 cups shortening
2 cups sugar
2 cups packed brown sugar
2 cups creamy or chunky peanut butter
2 teaspoons vanilla extract
4 eggs
5 cups flour
4 teaspoons baking soda

directions

Cut four pieces plastic wrap 12 x 14". Set aside.

Cream shortening, sugar, brown sugar and peanut butter in large bowl. Beat in vanilla and eggs until light and fluffy.

In large bowl, mix flour and baking soda. Gradually stir flour mixture into egg mixture until blended.

Divide dough into 4 pieces. Wrap and shape each into an 8 x 10" roll. Wrap in foul. Label, date and freeze. Use within 6 months.

To bake 1 roll of dough, let dough thaw slightly. preheat oven to 350 degrees F. Cut slightly thawed dough into 1" thick slices. Cut each slice into fourths. Roll each piece into a ball. Place balls on ungreased baking sheet about 1 1/2" apart.

Use tines of fork to flatten cookies by pressing dough in criss-cross fashion. Bake 8 to 10 minutes until lightly browned. Remove from baking sheets. Cool.
