INGREDIENTS:

2 tablespoons butter or margarine
1 medium onion, chopped
2 cans (14.5 ounce size) diced tomatoes, undrained
1 cup chicken broth
1 cup heavy whipping cream
1/4 teaspoon salt
sour cream, or thinly sliced fresh basil (optional)


DIRECTIONS:

Melt butter in medium saucepan over medium heat. Add onions; cook 2 minutes, or until crisp-tender, stirring occasionally.

Add tomatoes with their juice, the broth, whipping cream and salt; mix well. Bring to a boil over high heat. Reduce heat to low; simmer 5 minutes, or until slightly thickened, stirring occasionally.

Pour into blender or food processor container; cover. Blend until smooth. Garnish each serving with sour cream or basil, if desired.

Excellent recipe and easy to make. I already had all the ingredients in my pantry--that's the only reason I tried this particular recipe, and I am glad I did! I added 1 T. Basil, 1 t. Parsley, and 2 T Splenda. I also drained my tomatoes a little to achieve a thicker texture that my family prefers. I only had 3/4 cup heavy cream, so I tossed in about 1/2 c. sour cream. My husband commented that he loved the texture, but would like more tomato flavoring. Next time I am going to toss in about a half can of tomato paste and see what happens.
