Authentic Turtle Soup

ingredients
1 pound turtle meat (preferably loggerhead)
1 jumbo onion, minced
3 stalks celery, minced
1/2 cup butter
3 ounces beef base
1 1/2 ounce lobster base
3 bay leaves
1/2 tablespoon oregano leaves
1/2 tablespoon thyme leaves
1/2 ounce Tabasco sauce
2 ounces Worcestershire sauce
1 can (10 ounce size) tomato sauce
2 quarts water
1 cup flour
2 cups water
1/4 lemon (pureed in blender with a little water)
4 boiled eggs, peeled and chopped
1/4 package fresh spinach, chopped
1/2 cup cooking sherry
directions
Brown the first three ingredients in butter in a large stockpot. Add next 8 ingredients and cook for approximately 10 minutes. Stir often.
Add 2 quarts water and cook at medium-high heat for 1 hour.
Combine flour and 2 cups water, and slowly add to soup, whisking constantly. Cook for 20 minutes at medium heat.
Remove from heat and add last four ingredients before serving.
