Irish Chowder Recipe

Serves/Makes: 6
Ingredients:
2 cups potatoes, diced
1/2 cup celery, diced
1/2 cup carrots, sliced
1/4 cup onion, chopped
2 cups boiling water
1 package (10 oz size) American cheese, grated
1 1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup margarine
1/4 cup flour
2 cups milk
2 cups creamed corn
Directions:
Combine the potatoes, celery, carrots, onion and the two cups boiling water in a large pot and simmer 10 minutes. Do not drain.
Make cream sauce with flour, margarine and milk. Add cheese. Add creamed corn and undrained vegetables to the cream sauce. Heat, but do not allow chowder to boil.
