3/4 pound dry black-eyed peas
28 ounces chicken broth
1 1/2 cup water
1 cup ham, diced
4 medium carrots, sliced
2 stalks celery, sliced
1/4 cup dried minced onion
1 teaspoon dried sage, crushed
1 teaspoon dried thyme, crushed
1/4 teaspoon ground red pepper
1 tablespoon lemon juice
In a 3 quart saucepan bring 4 c. water and black-eyed peas to boiling. Boil, uncovered, for 10 minutes. Drain and rinse.
In a 4-quart crockpot combine broth, 1 1/2 c. water, ham, carrots, celery, onion, sage, thyme and red pepper. Stir in drained peas.
Cover; cook on low for 11-12 hours or on high for 4 1/2-5 1/2 hours. To serve, stir in the lemon juice.

I'm currently making this recipe this year for part of my New Years Good Luck Dinner and I have to say as it cooks in my Crock Pot it smells amazing. I can hardly contain myself from wanting to eat it now. Thanks for the RECIPE. Happy New Years to all much success and many Blessings in 2013.

I tried this recipe today but, I added more ham and also some minced garlic with the leftover gravy and ham drippings from Easter,and some corn. Turned out very well. I used my own black-eyed peas that we grew from our garden last year, what a treat!
