Persimmon Bread Recipe

Serves/Makes: 1 loaf
Ingredients:
1 3/4 cup flour
1 teaspoon baking soda
3/4 teaspoon salt
1/2 teaspoon ground mace
1/4 cup sugar
2 eggs, beaten
1/2 cup butter, melted in microwave
1/3 cup Jack Daniels
1 cup seeded, pureed persimmon pulp
1 cup white raisins
1 cup chopped pecans
Directions:
Combine flour, soda, salt and mace; set aside. Combine sugar, eggs, butter, Jack Daniels and persimmon pulp. Mix well. Add two mixtures together and stir in the white raisins and chopped pecans. Spray and flour bread mold and spoon batter in. Place in preheated oven (350) for 1 hour, 15 minutes.
