Ingredients:
1/2 cup corn oil
3/4 cup sugar
1 3/4 cup flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 cup carrot, shredded
2 eggs, beaten
1/2 cup nuts

Directions:

Grease a 8-1/2 X 4-1/2" loaf pan.

In large bowl, stir together oil and sugar. In a separate bowl, combine the flour, baking powder, salt and cinnamon; stir into oil mixture. Stir in carrot. Add eggs, one at a time, beating well after each addition. Stir in nuts.

Turn into prepared pan. Bake at 350 for 55-60 minutes or until cake tester inserted in center comes out clean.
