Ingredients:
2 eggs, large
1 cup applesauce
1 cup sugar
1/3 cup vegetable oil
3 tablespoons milk
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
2 cups flour
1 1/4 cup finely chopped pecans
1/2 cup mixed candied fruit
1/4 cup brown sugar
icing sugar for garnish, optional

Directions:

Preheat oven to 350F.

In large bowl beat eggs till foamy. Stir in applesauce, sugar, oil, and milk. In separate bowl, mix 1/2 teaspoon cinnamon, nutmeg, baking soda, baking powder, salt, and flour. Gradually add this to first mixture, beating with a spoon till well mixed. Stir in 1 cup of the nuts and the fruit. Spread in well greased 9 x 5 x 3 inch pan.

Mix remaining cinnamon, nuts, and brown sugar. Sprinkle evenly over top of batter, press lightly with fingers. Bake one hour or till done. Cover with foil last half hour. Cool on rack, sprinkle with icing sugar. Can be frozen.
