Serves/Makes:   3 pies

  

Ingredients:
9 medium sweet potatoes or yams
1 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup firmly packed brown sugar
1/2 teaspoon salt
1/4 teaspoon nutmeg
3 eggs, well beaten
2 cups milk
1 tablespoon vanilla
3 unbaked 9" pie shells

Directions:

For the filling, boil sweet potatoes until tender. Peel and mash. Heat oven to 350F. Combine butter, granulated sugar, brown sugar, salt and nutmeg in a large bowl. Beat at medium speed of an electric mixer until creamy. Beat in sweet potatoes and mix well. Beat in eggs then milk and vanilla, slowly. Spoon into 3 unbaked pie shells, using about 4 cups of filling per shell. Bake at 350F for 50-60 minutes or until set. Cool to room temperature before serving. Store in refrigerator.
