ingredients
6 tablespoons olive oil
6 chicken breast halves, boned
1 teaspoon chicken stock base
1/4 teaspoon oregano
1/4 teaspoon basil
1 clove garlic, minced
1 dash black pepper
3/4 cup dry white wine
1/4 cup water
1 tablespoon minced parsley
directions
Heat 3 to 4 Tbs. of oil in a fry pan. Add the chicken and saute until it is lightly browned and tender, about 20 minutes.
As the chicken browns, transfer the pieces to another skillet. After the chicken is browned, pour off the fat in the first pan but retain brown bits.
Add the remaining 2 Tb. oil to pan. Stir up the brown bits then stir in the chicken stock base, oregano, basil, garlic, and pepper. Add the wine and water and simmer about 5 minutes. Pour over the chicken and simmer 4 to 5 minutes.
Transfer the chicken to a warm platter and sprinkle it with parsley.
