French Lemon Pie

ingredients
1 unbaked 9-inch pie shell
4 eggs
1 cup light corn syrup
1 teaspoon grated lemon rind
1/3 cup lemon juice
2 tablespoons butter, melted
1/2 cup sugar
2 tablespoons flour
directions
Beat eggs well, add the corn syrup, lemon rind, juice and melted butter. Combine sugar and flour; stir into egg mixture.
Pour into pie shell. Bake at 350 degrees F. for 50 minutes. Chill thoroughly. Serve with whipping cream.

OMG! This pie is delicious! I used a store-bought shortbread crust instead of regular pie crust. Only bake about 40 minutes though and watch it closely so it doesn't burn. The ingredients in the filling caramelize the crust. I was afraid it was ruined, but it was wonderful.
