ingredients
1 can (16 ounce size) pumpkin
1/2 cup evaporated skim milk
1/2 cup sugar
3 large egg whites, lightly beaten
2 teaspoons pumpkin pie spice
1 tablespoon flour
directions
Combine all ingredients in a microwave dish and beat until smooth. Microwave, uncovered, for 5 minutes on High, stirring often.
Turn microwave to Medium and cook an additional 12-15 minutes, or until the center is almost set. Let pumpkin pie stand 10 minutes to set.
