Ah, the unassuming envelope of onion soup mix. It's more than just for onion soup (or dip). It adds tremendous flavor (and convenience) in all these recipes.

ingredients
2 cups water
2/3 cup lentils, washed and picked through
1/4 cup brewed coffee
1 1/2 cup Splenda, or sugar
3/4 cup cocoa powder
1 cup canola oil
4 large eggs
2 teaspoons vanilla extract
1 1/2 cup sifted flour
1/4 teaspoon salt
directions
Preheat oven to 350 degrees F. Grease and flour 9x12-in baking pan.
In saucepan, combine the water and the lentils and bring to a boil. Simmer for 40 minutes and then drain lentils.
Place cooked lentils into a food processor or blender with the brewed coffee and puree until smooth.
In large mixing bowl, combine sugar or Splenda, cocoa, oil and eggs and beat well for 2 minutes.
Add vanilla and the pureed lentils and mix to blend well. Stir in flour, baking soda, baking powder and salt.
Pour batter into prepared pan and bake for 20-25 minutes, until a knife inserted in the center comes out clean.
Feel free to sprinkle with a little powdered sugar or slice some strawberries on the side of each serving and top with a little dollop of whipped cream.
