Chocolate Cake With Coffee Mocha Recipe

Serves/Makes: 12
Ingredients:
2 cups sugar
2 cups flour
1/2 cup shortening
1 teaspoon soda
2 eggs, beaten
1/2 teaspoon salt
1/2 cup cold coffee
1/2 cup cocoa
1 cup hot water
1 teaspoon vanilla
Directions:
Beat sugar, shortening, salt and vanilla together; add eggs and mix on medium speed with electric mixer. Blend in cold coffee.
Mix cocoa and soda with hot water. Add alternately with flour.
Bake in a 9 x 13" greased and floured pan for 35-40 minutes in a 350 degree oven.
Sprinkle baked cake with powdered sugar; or serve warm with whipped cream. Or frost cooled cake if preferred.
This cake freezes very well.
