Turkey Poppyseed Casserole
INGREDIENTS:
2 cups cooked noodles
1/4 cup chopped onion
1/4 cup chopped green bell pepper
2 tablespoons butter or margarine
2 tablespoons all-purpose flour
2 1/2 cups milk
1/2 teaspoon salt
1/8 teaspoon cayenne pepper
2 cups chopped cooked turkey or chicken
1 1/2 teaspoon poppy seeds
1/4 cup grated Parmesan cheese
1 jar (2 ounce size) chopped pimientos, drained
1/2 cup shredded mozzarella cheese
DIRECTIONS:
Cook noodles or pasta according to package directions. Drain well and set aside.
In a small pot, saute onion and green pepper in butter until tender. Add flour and stir until smooth.
Gradually add milk, stirring until smooth and well blended. Add salt and cayenne. Cook over medium heat, stirring constantly, until bubbly.
In a large bowl, combine parmesan, pasta, poppy seeds, turkey, and pimientos. Add the cooked sauce and mix well.
Spoon into an 8x8" casserole that has been sprayed with nonstick cooking spray. Bake covered in a 350 degrees F oven for about 45 minutes, or until center is bubbly.
Uncover and top with mozzarella. Continue baking uncovered until cheese is bubbly and has started to brown.
