Turkey Meat Loaf With Roasted Red Bell Pepper Sauce

non-stick cooking spray
1 cup minced onion
1 package (8 ounce size) presliced mushrooms, finely chopped
1 cup shredded carrot
1 tablespoon minced garlic
1 pound ground turkey (light and dark meat)
1 cup quick-cooking oats
1/4 cup ketchup
1/3 cup chopped fresh parsley
1 tablespoon Worcestershire sauce
1 large egg, lightly beaten
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons ketchup
Roasted Red Bell Pepper Sauce
1 jar (7 ounce size) roasted red bell peppers, drained
1/3 cup ketchup
1 teaspoon minced garlic
3/4 teaspoon freshly ground black pepper
directions
Preheat oven to 375 degrees F.
Heat a large nonstick skillet coated with cooking spray over medium-high heat, add onion, mushrooms, and carrot. Cook, stirring occasionally, 6 to 8 minutes or until vegetables are tender and all liquid is evaporated. Add garlic, cook 1 minute. Remove from heat, cool slightly.
Combine onion mixture, ground turkey, oats, ketchup, and next 5 ingredients in a large bowl, mixing well. Press turkey mixture into an 8 x 4-inch loaf pan coated with cooking spray. Brush 2 tablespoons ketchup over top.
Bake at 375 degrees F for 55 minutes to 1 hour or until a thermometer registers 170 degrees F. Let stand 10 minutes. Remove from pan and slice. Serve with Roasted Red Bell Pepper Sauce.
ROASTED RED BELL PEPPER SAUCE: Combine all ingredients in a blender or food processor, process 1 to 2 minutes or until smooth.

This is not your normal meatloaf. The texture is a bit different with the cooked veggies mixed in (a more rough or crumbly loaf) but we loved it. The roasted pepper sauce on top was fabulous and tied the flavors together. It was more work, but if you're sick of regular meatloaf, it's worth it.
