ingredients

2 tablespoons butter
1 package (8 ounce size) sliced fresh mushrooms
1 pound spaghetti, broken into pieces and cooked
4 cups cooked, cubed turkey
1 cup chicken broth
1/2 cup onion, finely chopped
1 can (10.75 ounce size) condensed cream of mushroom soup, undiluted
1 can (10.75 ounce size) condensed cream of chicken soup, undiluted
1 jar (4 ounce size) chopped pimientos, drained
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 package (8 ounce size) shredded Cheddar cheese

directions

Preheat the oven to 350 degrees F.

Melt the butter in a medium skillet over medium-high heat. Add the mushrooms. Saute, stirring occasionally, until tender, 2 to 3 minutes.

Combine the mushrooms, spaghetti, turkey, broth, onion, condensed soups, pimiento, salt, pepper and 1 cup of the Cheddar in a large bowl.

Spread the mixture in a 9" x 13" baking dish. Cover and bake for 45 minutes. Uncover the dish.

Sprinkle with the remaining cheese. Bake until bubbly and the cheese is melted, 10 to 15 minutes longer.

I was concerned that the pasta would be mushy in this but it was really good. A very filling and flavorful recipe.

We tried this recipe, minus the mushrooms and it's awesome. Will definitely do this again!
