ingredients

1 1/2 pound ground beef
1 egg, beaten
1/4 cup milk
1 1/2 teaspoon salt
2 slices bread, crumbled
1/2 onion, chopped
2 tablespoons green bell pepper, chopped
2 tablespoons celery, chopped
6 potatoes, cut-up
1/2 cup ketchup (or as needed)

directions

Mix egg, milk, salt and breadcrumbs. Let stand to soften.

Thoroughly combine with meat and chopped vegetables. Shape into loaf and put in crockpot. Top with ketchup. Place potatoes around the sides (if you peeled them, coat with butter to keep from darkening).

Cover and cook on High for 1 hour, then on Low for 8-9 hours.

This was a complete dinner with the potatoes cooked in with it. They got very flavorful from the meat juices. I will make this again for sure as the entire family enjoyed it which is always a challenge.

My go-to recipe for crock pot meatloaf. Super easy and has a good meatloaf texture (you can slice it and it doesn't fall apart).

COMMENT:
This seems a little worrisome to me........is there enough moisture in the potatoes and meat where it won't burn on low? Just sounded good so am trying it.....mixed everything together instead of putting mustard, ketchup, and brown sugar on top.......also used 2/3 Heinz 57 and 1/3 Heinz ketchip...we'll see what happens...

Assuming you don't have one of the newer (awful) crockpots (by a certain manufacturer that starts with "R") you'll see that the crock rarely needs additional liquid
