Lemon Blueberry Pancakes

ingredients
1 egg
1 cup flour
3/4 cup milk
1 tablespoon sugar
2 tablespoons butter
1/2 tablespoon baking powder
1/2 tablespoon baking soda
1/2 teaspoon salt
2 teaspoons grated lemon rind
1 teaspoon lemon juice
1/2 cup fresh or frozen (thawed) blueberries
directions
Mix milk and lemon and let set for 5 minutes. Mix dry ingredients together. Beat egg until fluffy, then pour in milk lemon mixture.
Combine all ingredients except blueberries. Don't over-mix, and leave batter a little lumpy. Stir in blueberries.
Heat a skillet for 2 minutes. Pour 3-inch dollops of batter in skillet and turn over when bubbles appear, approximately 2 minutes. Cook for another minute or so.
