1/2 cup chopped onion
1/4 cup butter or margarine
1/4 cup flour
3 cups water
4 teaspoons instant chicken bouillon
2 packages (10 ounce size) frozen chopped broccoli, thawed and drained
3 cups shredded cheddar cheese
2 cups half and half


In large saucepan, cook onion in butter until tender; stir in flour and blend well. Gradually stir in water; add bouillon and broccoli. Cook and stir until thickened and broccoli is tender.

Stir in cheese and half and half. Cook and stir until cheese is melted and soup in heated through. Do not boil.

This really is the best broccoli cheese soup (ever!) I made with fresh broccoli because it was what I had on hand and it turned out beautifully.

Absolutely amazing! I was looking for a wonderful broccoli cheese soup recipe that would cure my craving, but it's really hard to find one that doesn't use Velveeta.

I only changed one thing when I made the recipe - I halved the boullion because I was unable to find low-sodium boullion when I went shopping.

It still came out wonderfully and is very flavorful! I will be making it again...and again...and again!

Hell yeah! I'm a complete amateur when it comes to cooking, but I had a midnight craving for some broccoli cheese soup and this recipe looked pretty simple.. And came out fantastic! I normally don't subject people to my cooking, but I'm keeping this batch to myself for my own selfish reasons..
