Tomato-Basil Crab Bisque Recipe

Serves/Makes: 4
Ingredients:
1 tablespoon margarine or butter
1/2 cup chopped onion
1/2 cup chicken broth
1 can (8 ounce size) tomato sauce
1 cup half and half
1 cup coarsely chopped cooked crab meat
1/4 cup chopped fresh basil
Directions:
Place a Dutch oven over medium high heat until hot. Add margarine. When melted, cook onion until golden, stirring frequently.
Add the broth, tomato sauce, half and half, and crab. Season with salt and pepper to taste. Bring just to a boil, reduce heat, cover tightly and simmer 5 minutes. Sprinkle with basil before serving.
