Prosciutto, Mozzarella And Artichoke Hearts Recipe

Ingredients:
2 tablespoons olive oil
3 artichoke hearts (frozen or canned and drained), cut into quarters
1 clove garlic, minced
10 kalamata olives, pitted and halved
Freshly ground black pepper
4 slices walnut bread
2 tablespoons butter, softened
3 1/2 ounces prosciutto (Parma ham), sliced
3 1/2 ounces mozzarella cheese, sliced
Directions:
Heat olive oil in a small frying pan over medium-high heat. When hot, add artichoke hearts and garlic.
Saute for 3 minutes or until garlic turns golden, taking care not to burn it. Add olives, season with pepper to taste and remove from heat. Taste for seasoning; add a bit of salt if necessary.
Spread all 4 bread slices with butter on 1 side. Lay prosciutto on 2 of the bread slices and top with cheese. Spoon on warm artichoke-olive mixture. Cover with remaining 2 slices of bread, buttered side down, and serve.
