Chicken Fajita Quesadillas Recipe

Ingredients:
3 tablespoons vegetable oil
1 medium onion
1 red pepper
1 green bell pepper
1 clove garlic
2 boneless skinless chicken breasts
2 teaspoons chili powder
1 teaspoon cumin
1/2 teaspoon oregano
1/2 teaspoon paprika
Salt and pepper
1/2 pound cheddar cheese
10 large flour tortillas
Directions:
Preheat oven to 450F.
Heat vegetable oil in a large sauté pan over medium high heat. Peel onion, cut in half and thinly slice. Add onions to oil and sauté.
Meanwhile, remove stem, seeds, and ribs from both the red and green peppers. Cut peppers into 1 inch pieces. Add peppers to onion and continue to sauté. Thinly slice chicken cutting into pieces that are 1/2-inch thick and no more than 1 inch wide. Mix spices together in a small bowl: chili powder, cumin, oregano, and paprika. Toss chicken with spices in a bowl. Add seasoned chicken to peppers and onions along with salt and pepper and continue to sauté until chicken is cooked through. Grate cheese.
Lay five tortillas out on two baking sheets. Divide chicken and pepper between those five tortillas and top with grated cheese. Top quesadillas with a second tortilla. Place quesadillas in preheated oven for 5-7 minutes until cheese is melted and tortillas are crisp. Serve immediately.
