Pecan-Cheese Wafers

ingredients
1 pound sharp Cheddar cheese, grated
1 cup butter, softened
2 cups all-purpose flour
2 teaspoons salt
1 dash cayenne pepper
1 cup chopped pecans
directions
Cream cheese and butter together, beating well. Add flour, salt and cayenne pepper, stirring until thoroughly mixed. Work in pecans.
Shape dough into 2 long rolls; cover with wax paper. Chill until dough can be easily sliced into thin wafers.
Place on cookie sheet and bake in 350 degrees F oven for 12 minutes. The wafers freeze well.

Love these! They freeze well and make a quick appetizer for company. In my oven it took a little longer to bake. The first batch I cooked and tasted I thought they were so so. Went ahead and cooked another batch and left them in long enough for them to brown a little around the edges and they were great! I put the first batch back in the oven a little longer and they were great too.

There are many similar recipes out there but this is my "go to". I use freshly grated sharp Cracker Barrel cheddar. In addition I add much more cayenne into dough. As soon as out of oven i sprinkle lightly with coarse salt and more cayenne. Great to freeze and folks rave. Lovely appetizer with a nice Cabernet
