ingredients
2 cups all-purpose flour, sifted
1 1/2 cup sugar
2 1/2 teaspoons baking powder
1 teaspoon salt
3/4 cup unsalted butter, room temp softened
1 teaspoon vanilla extract
1 egg
1 egg yolk
1/2 cup milk
directions
Combine flour, baking powder and salt in a bowl, set aside.
Put butter and sugar in large bowl and cream until light and fluffy using mixer until well incorporated. Add vanilla and egg and egg yolk. Mix again until combined.
Add flour and milk alternately blending with mixer and mix on medium for 2 minutes to assure a light and fluffy final product.
Scrape down bowl and fill paper lined muffin cups 3/4 full the result will be a high domed cupcake perfect for frosting.
Bake at 375 degrees F for 22-27 minutes, depending on oven, until nicely golden in color. Cool on rack.

Very delicate but amazing! Lovely light yellow color and so tender. I frosted them with a lemon buttercream.
They collapse if you open the oven at all while they are cooking. I don't have an oven with a window and so i have to open it to check.
