Scallop Salad Recipe

Serves/Makes: 4
Ingredients:
1 pound bay scallops (or sea scallops quartered)
1 lime, juice only
1/4 cup watercress leaves
1/2 cup mayonnaise
2 tablespoons green onion
2 tablespoons parsley
1 teaspoon fresh dill
mixed salad greens
Directions:
Rinse and drain the scallops. Steam them in water just until done. (Don't over cook!). Drain, squeeze over lime juice, over and chill. Put remaining ingredients (except greens) into food processor and process until smooth. Refrigerate.
To serve: arrange greens on salad plates, divide scallops among them and top with a dollop of the sauce.
