Just because sauerkraut is usually relegated to a condiment doesn't mean it can't shine as a main ingredient. Along with chopped veggies and a simple dressing, it makes a refreshing and healthy salad.


1 quart sauerkraut
1 red or green bell pepper
1 small onion
1 cup celery
1 carrot, peeled and shredded
1 small jar pimentos
1 1/2 cup sugar
1/2 cup salad oil
2/3 cup vinegar
1/3 cup water
Rinse and drain sauerkraut. Chop bell pepper, onion and celery. Mix sugar, oil, vinegar and water; stir to dissolve sugar. Add vegetables, sauerkraut and pimentos.
Marinate overnight. Drain before serving.
