Dandelion and Broccoli Sprout Salad

ingredients
2 cups dandelion leaves and buds
1 cup broccoli sprouts
1 cup fresh baby spinach
1 cup field lettuce
1 cup romaine lettuce, torn in bite-sized pieces
1 cup brown mushrooms, sliced
3 tablespoons fresh chives, chopped
2 plump tomatoes, chopped
3/4 cup olive oil
1/4 cup balsamic vinegar
1 teaspoon Dijon mustard
2 cloves garlic, minced
salt and pepper, to taste
1/2 cup pine nuts
2 ounces warmed goat cheese (optional)
directions
Place greens and vegetables (through tomatoes) in a large, chilled bowl.
Mix oil, vinegar, mustard, garlic, salt and pepper together and shake well. Pour dressing over salad, top with pine nuts and, if desired, goat cheese.
