It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).
Asian Chopped Salad With Hoisin-Ginger Dressing

ingredients
Dressing
1 cup vegetable oil
1/3 cup hoisin sauce (see note)
1/2 cup rice vinegar
2 tablespoons soy sauce
2 teaspoons peeled and grated fresh ginger
2 cloves garlic, minced
Salad
2 bags (10 ounce size) baby spinach
2 bags (10 ounce size) hearts of romaine
4 medium carrots, coarsely grated
6 green onions (white and tender green parts), chopped
3 cups thin strips cooked turkey, chicken or duck
2 cans (15 ounce size) mandarin orange segments, drained
2 cups chopped cashews
directions
To prepare dressing: Combine oil, hoisin sauce, vinegar, soy sauce, ginger and garlic in a jar; fasten the lid and shake to combine. If making ahead, refrigerate for up to 3 days.
To prepare salad: Combine spinach, romaine, carrots, green onions, turkey and orange segments in a large salad bowl.
Toss with dressing to taste. Sprinkle with cashews; serve immediately, passing the remaining dressing at the table.

Hoisin sauce is sold in jars in ethnic markets and in the Asian section of supermarkets.
