Sunday Hash Browns

4 tablespoons olive oil
1 onion (chopped)
1 green bell pepper, chopped
2 large potatoes (diced)
salt and pepper, to taste
Saute onion, green pepper and red pepper in olive oil in a non-stick skillet over medium heat. Add in diced potatoes.
Turn potatoes until brown on both sides. Salt and pepper to taste. Remove and add parsley for garnish.
