Mississippi Mud Cake Recipe

Serves/Makes: 10
Ingredients:
2 cups sugar
1 cup butter or margarine
4 eggs
1 1/2 cup flour
1/2 cup unsweetened cocoa
1/4 teaspoon salt
3 teaspoons vanilla
1 cup chopped walnuts
5 ounces package miniature marshmallows
***Icing:***
1 pound box powdered sugar
1/3 cup unsweetened cocoa
1/2 cup butter or margarine, melted
1 teaspoon vanilla
1/4 cup milk, as needed
1 cup chopped walnuts
Directions:
Cream butter and sugar. Mix in eggs. Sift flour, cocoa, and salt together and add to creamed mixture. Mix well. Add vanilla and nuts. Pour into greased and floured 9" X 13" pan. Bake at 300 degrees for 35 minutes. Remove from oven and cover with miniature marshmallows. Return to oven for 10 minutes, until marshmallows are golden brown.
Cool one hour and ice with:
Sift together sugar and cocoa. Mix with melted butter. Add vanilla and enough milk to get the right spreading consistency. Add nuts and spread on cake.
