White Chocolate Almond Rice Pudding Recipe

Ingredients:
1/2 cup medium or short-grain rice
2 cups cream
2 cups half and half
2 cups milk
1/2 cup sugar
4 (6 oz.) white chocolate
1 teaspoon vanilla extract
1 teaspoon Amaretto liqueur (optional)
almonds, toasted and rough chopped
1 pinch salt

Directions:

Combine cream, half and half, milk, sugar, vanilla, Amaretto, salt, and rice in a slow-cooker or crock pot.

Turn the setting to low and cook rice slowly, stirring every 15 minutes.

Cook until the liquid has been almost entirely absorbed. This may take as long as an hour, depending on your slow-cooker.

Melt the white chocolate in the top of a double boiler. Stir into the rice.

Just before serving, stir in the chopped toasted almonds, saving some for garnish.

Serving Suggestions: Serve a scoop of rice pudding, hot or cold, and drizzle chocolate sauce over the top.

Garnish with more chopped almonds.
