Slow Cooker Simple Eggless Rice Pudding

1 cup long-grain rice
6 cups milk (skim or 1%)
1/3 cup sugar
3/4 teaspoon cinnamon
1 teaspoon vanilla extract
Combine the rice, milk, sugar, and cinnamon in the crock pot. Stir in the raisins if using.
Cover, cook on high for 15 minutes. Reduce heat to low and cook for 6-8 hours.
If your crock pot cooks "hot", cook on low for 4-5 hours. You can also cook this on the warm setting overnight to serve this as a hot breakfast.
When cooked, stir in the vanilla. If desired you can stir in fruit as well.
