Carrot-Rice Loaf

ingredients
4 cups grated raw carrots
4 cups steamed brown rice (or mashed garbanzos)
1 cup peanut butter, diluted with a little milk or water
1 cup coarse bread crumbs
2 tablespoons onion powder
OR
1/2 cup sauteed onions
thyme to taste
salt to taste
directions
Mix nut butter with rice. Add carrots and remaining ingredients, using crumbled bread as necessary to make right consistency.
Put into casserole or loaf pan. Bake 45-55 minutes at 350 degrees F. Serve with favorite gravy.
