Ah, the unassuming envelope of onion soup mix. It's more than just for onion soup (or dip). It adds tremendous flavor (and convenience) in all these recipes.
Apple Rice Casserole

ingredients
2 cups cooked brown rice
3 small sweet apples, peeled, coarsely shredded
1/3 cup apple juice
1 tablespoon firmly packed brown sugar
2 teaspoons lemon juice
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1 pinch ground nutmeg
directions
Preheat oven to 350 degrees F.
Lightly oil a 1 1/2-quart casserole or spray with a nonstick cooking spray.
In a large bowl, combine all ingredients. Mix well. Spoon into prepared pan. Cover tightly and bake 45 minutes. Serve hot.
