Pizza Margherita Recipe

Ingredients:
Pizza dough, homemade or store bought
1/2 cup olive oil
2 cups canned peeled tomatoes, well drained and cut into half inch pieces
1/2 pound mozzarella cheese, grated
1 teaspoon dried oregano
20 fresh basil leaves
Salt
Pepper
Directions:
Pour 2 Tb. olive oil into the center of each of two 13" pizza pans. Using lightly floured fingers, pat each ball of pizza dough into a thick round.
Add one round of dough to the center of each pizza pan. Pat and press the dough to cover the bottom of the pans, rim to rim. Cover and let sit in a warm pot for about 30 minutes.
Preheat the oven to 400.
Scatter equal amounts of the ingredients over each of the two pizzas in this order: tomato pieces, mozzarella, oregano, basil, the 1/4 cup remaining olive oil and salt and pepper to taste. Place the pans in the oven and bake the pizzas until the crust is a deep golden brown, about 25 to 30 minutes.
