ingredients
1 medium onion, chopped
2 tablespoons water
1 teaspoon margarine
1 1/4 cup hot water
2/3 cup parboiled rice, uncooked
1 teaspoon chicken bouillon granules
1/4 teaspoon dried basil
1/4 teaspoon dried thyme
1/4 teaspoon black pepper
1/2 cup chopped fresh parsley
directions
Combine onion, 2 tablespoons water, and margarine in a 2-quart casserole. Cover with heavy-duty plastic wrap, and microwave at HIGH for 1 1/2 to 2 minutes or until onion is tender.
Add hot water, rice, bouillon granules, basil, thyme, and pepper; stir well. Cover with heavy-duty plastic wrap, and microwave at HIGH for 4 to 5 minutes. Reduce power to MEDIUM (50% power), and microwave an additional 12 to 14 minutes or until liquid is absorbed.
Stir in parsley; let stand, covered, 8 minutes. Fluff with a fork, and serve immediately.
