Crab Cake with Liberal Gin Sauce
INGREDIENTS:
***Crab Cakes***
2 boxes of crab (if you prefer,you can replace it by 2 lobsters.)
1 small bag of gelatine or 2 leaves of gelatine
3 middle sized tomatoes
3 hard eggs
1 glass of fresh cream
salt
black pepper
powder of mustard
cucumber
***Liberal Gin Sauce***
1 little bowl of mayonnaise
3 tablespoons tomato sauce
1 tablespoon Worcestershire sauce
1 tablespoon lemon juice
1/4 of glass fresh cream
2 tablespoons gin
DIRECTIONS:
Crab Cakes
Mix the gelatine in a cup of 1/4 of cold water. Put the cup in a bowl of hot water in the gelatine to be dissolved. Mix in a potted meat, the flesh of the crabs, the pealed tomatoes and delicately hashed, 1 table spoon of salt, the hard eggs delicately hashed, 1/4 of table spoon of ground white pepper, 1 and 1/2 table spoon of powder of mustard. Add the gelatine. Put in the refrigerator in order all the ingredients to be taken and solid. Just whip fresh cream then add it to the mixing. Pour all the ingredients in a charlotte mould and let it freeze. Serve it with some slices of cucumber and the liberal gin sauce.
Liberal Gin Sauce
Mix in a bowl the mayonnaise and the tomato sauce. Add the Worcestershire sauce, the lemon juice, the fresh cream and the gin.
