1 pound dried black eyed peas, soaked overnight in water to cover 4 cups water 2 teaspoons salt 1/4 teaspoon black pepper 1 large onion, chopped 2 stalks celery, chopped 1/2 pound salt pork or lean ham, cut into pieces OR 2 ham hocks, cut into pieces
Drain peas and place in crock pot. Add water and remaining ingredients.
Cover and cook on high 1 to 2 hours then turn to low 8 to 9 hours. Serve over fluffy hot rice and pass the cornbread.
This will be the 3rd New Years Eve that I have used this recipe. I serve it over white rice and Honey Butter Cornbread on the side and my family loves it!!

Used smoked pork and sauteed onions in butter.
Cooking time for me was quite different -perhaps the type of slow cooker I used.
2 hours on high and 1 hour on low.
I will definitely make again.
